This is as easy and yummy as it gets. The perfect side salad for dinner or as a main for lunch. Serves 1 as an entrée or 2 as a side.
INGREDIENTS:
3 cups romaine lettuce, chopped¾–1 cup organic rotisserie chicken, chopped
1 cup organic english cucumbers, chopped
2 green onions, diced
½ cup organic mozzarella cheese, freshly grated (sub plant-based cheese)
¼ cup sunflower or pumpkin seeds
JF Simple Mustard Vinaigrette, to taste
JF Spicy Salt, to taste
Fresh cracked black pepper, to taste
