Next Thursday is St. Patrick’s Day so of course, it’s cabbage city for me. Luckily it’s a great salad base and worked perfectly in today’s lunch. Serves 1.
INGREDIENTS:
Cabbage, sliced thin on the mandolin
Romaine, chopped
Cilantro, left whole
Green onion, chopped
Cucumber, sliced thin on the mandolin
Celery, sliced thin on the mandolin
Avocado, sliced
JF Zesty Spa Tuna (optional)
JF Curry Salt, to taste
JF Mayo-Free Zesty Spicy Green Goddess Dressing, to taste
JF Mayo-Free Zesty Spicy Green Goddess Dressing:
⅔ cup plain coconut yogurt
½ jalapeño, deseeded and roughly chopped
1 lime, juiced
2 green onions, roughly chopped
½ cup fresh cilantro
⅓ cup olive oil (I like Fancy Peasant)
¼ tsp fresh cracked black pepper
1 Tbsp honey (optional)
