MAYO-FREE BLUE CHEESE DRESSING

One of my favorite meals is a giant wedge salad and a martini, yet I despise mayo.
Restaurant versions are normally covered in a heavy mayo dressing and fried onions. I prefer a lighter take on the traditional dressing, so here is the dressing I like to make at home. Store bought blue cheese dressing is normally a let down as well. Serves 4. 

INGREDIENTS

¾ cup plain greek yogurt (sub plain coconut yogurt)
½-1 cup of your favorite blue cheese (sub plant-based cheese)
¼ cup buttermilk (sub almond milk)
1 Tbsp white vinegar
1-2 tsp garlic powder
JF Universalt Salt or JF Spicy Salt, to taste

PROCESS

In a medium bowl, stir together all of the ingredients. Place the dressing  in an airtight container until  chilled. This gets better after a couple of days. Serve over salad of your choice. It is also amazing on top of fresh tomatoes and avocados.
