The ultimate summer salad. Go heavy on the cabbage and scoop with grain-free chips for more of a "lobster salsa" vibe. Serves 1.
INGREDIENTS:
- 1 cup cabbage, finely chopped
- ½ cup lobster meat, finely chopped
- 2 Tbsp red onion, finely chopped
- ¼ cup corn, roasted
- 1 Tbsp jalapeño, deseeded and finely chopped
- 1 Tbsp cilantro, finely chopped
- ½ Tbsp Italian parsley, finely chopped
- Squeeze of fresh lime, to taste
- 2 Tbsp JF Simple Mustard Vinaigrette, more to taste
- JF Spicy Salt, to taste
PROCESS:
1. In a large bowl, combine the chopped napa cabbage, lobster meat, red onion, corn, jalapeño, cilantro, and parsley.
2. Dress in a generous squeeze of fresh lime juice and my JF Simple Mustard Vinaigrette. Finish with JF Spicy Salt.
3. Scoop with grain-free chips or enjoy on its own!
