In my quest to create my favorite dressings without mayo, I came up with this and it is delicious. Try it on a Mexican inspired chopped salad. Serves 4.
INGREDIENTS:
⅔ cup coconut yogurt
½ jalapeño, roughly chopped and deseeded
1 lime, juiced
2 green onions, roughly chopped
½ cup fresh cilantro
⅓ cup olive oil
½ tsp
JF Spicy Salt¼ tsp fresh cracked black pepper
1 Tbsp honey (optional)
PROCESS:
Combine all of the ingredients in a blender and pulse until smooth and creamy. Store this in an airtight container in the refrigerator for up to 3 days; it probably won’t last that long! Make sure to check your yogurt expiration date before making this.
