Moroccan Meatballs with TikTok Taters

A yummy Sunday night comfort meal! Perfect for the whole family especially in chilly winter months. Serves 4 with a side.

INGREDIENTS:

TikTok Taters:
4 russet potatoes, peeled and sliced thin on the mandoline #1
Olive oil (I like Kyoord)
JF Spicy Salt, to taste

 

Tomato Sauce:
Olive oil
1 white onion, chopped
2 tsp cumin
1 tsp turmeric
½ tsp cinnamon
½ tsp Aleppo pepper (sub chili powder)
1 tsp JF Spicy Salt
2 tsp sweet paprika
10 grinds fresh cracked black pepper
2 (14.5oz) cans organic diced tomatoes (sub crushed tomatoes)


Moroccan Meatballs:
1lb grassfed, 80/20 ground beef
1 small brown onion, grated
2 garlic cloves, chopped fine
3 Tbsp fresh cilantro, coarsely chopped with stems included
¾ tsp JF Spicy Salt
½ tsp Aleppo pepper (sub chili powder)
1 Tbsp sweet paprika
1½ tsp cumin
5 grinds fresh cracked black pepper
Olive oil (I like Kyoord)

TOPPINGS:

Vegan feta, crumbled (I like Trader Joe’s)
Cilantro, chiffonade

PROCESS:

TikeTok Taters
Preheat your oven to 250º. Toss your mandoline-sliced potatoes in a generous amount of olive oil and season well with JF Spicy Salt. In a parchment-lined loaf pan, layer them upwards, building out to all sides evenly. Cover with parchment and bake for 3 hours.


Once time has elapsed, remove from the oven and allow to cool. Cover them with a weighted pan overnight to really compress this into one loaf.


When you're ready to fry these, trim the edges and cut them into sticks. In a deep pot, bring about ½ an inch of olive oil to a simmer. Carefully place in your potatoes and allow them to brown on all sides. Be careful doing this, the oil splatters very easily. 

Once they're browned to your liking, remove them from the oil and place them on a wire rack to cool. Finish with a touch more JF Spicy Salt.


Tomato Sauce

In a large pan begin to warm your olive oil. Add in your onion allowing it to soften and become fragrant; about 5-10 minutes. Over a low heat, work in the cumin, turmeric, cinnamon, Aleppo pepper, JF Spicy Salt, sweet paprika, and cracked black pepper. These will begin to toast and open up as they warm. Pour in both cans of your diced tomatoes. Allow this to cook down for about 20 minutes while you work on the meatballs. 

 

Moroccan Meatballs 
Place the ground beef in a large bowl and work in your grated brown onion, chopped garlic cloves, cilantro, JF Spicy Salt, Aleppo pepper, sweet paprika, cumin, and cracked black pepper. Don’t over-mix the meat here - just loosely combine these ingredients. After, form your meatballs; this should yield about 24 ping pong-sized balls. 


In a large pan, begin to warm your olive oil over a medium heat. Place the meatballs in and give them a quick sear on all sides. Season with a touch more JF Spicy Salt


Transfer the lightly browned meatballs into your sauce to finish cooking. Toss to coat then cover and simmer for 15 minutes on low heat. 


Once time has elapsed, plate these warm with our TikTok Taters. Finish with fresh cilantro and crumbled vegan feta. Enjoy!
