INGREDIENTS:
Simple Lime Summer Slaw:
4 cups green cabbage, cored and very thinly sliced
½ cup white onion, peeled and very thinly sliced
½ red bell pepper, cut into thin strips
½ cup carrots, peeled and shredded
1 small jalapeño, deseeded and diced
JF Universal Salt, to taste
Fresh cracked black pepper, to taste
Vinaigrette:
1 fresh lime, juiced
3 Tbsp apple cider vinegar
1 tsp Dijon mustard
1 tsp honey
1 tsp JF Universal Salt
PROCESS:
Vinaigrette
Combine the lime juice, apple cider vinegar, Dijon mustard, honey and JF Universal Salt in a small bowl. Whisk together.
Simple Lime Summer Slaw
In a large bowl, toss together cabbage, onion, carrot and jalapeño. Pour your vinaigrette over the vegetables, toss to combine. Season to taste with more JF Universal Salt and fresh cracked black pepper. Cover and refrigerate for one hour before serving.
