MOM DIDN'T GET TO EAT TODAY FRIED RICE

This is one of my go-to quick meals when I haven't had time to eat all day. This works best with leftover rice, not fresh rice. Serves 1. 

INGREDIENTS:

1 Tbsp olive oil 
2-3 cups rice (sub cauliflower rice)
2-3 eggs
¼ white onion, diced fine
1 green onion, diced fine
Pinch of JF Salt
1-3 tsp tamari (sub coconut aminos)
Hot sauce

PROCESS:

Heat the oil in a medium frying pan. Add white onion and sauté on medium until fragrant and translucent. Add rice and break up into onion. Once warmed through add egg and combine. Cook on low until cooked through. Add the coconut aminos. Add JF Salt of choice and green onion. Mix well. Serve with hot sauce of your choice. Try to sit down and not eat standing in the kitchen. I know how it is....
