MOROCCAN INSPIRED CAULIFLOWER RICE

MOROCCAN INSPIRED CAULIFLOWER RICE

This dish was inspired by the vibrant colors and spices used in Street Food, which is one of my favorite shows on Netflix. Serves 4.

INGREDIENTS

2 (10oz) bags of organic cauliflower rice
¼ cup slivered almonds
¼ cup golden raisins
4 Tbsp ghee
2 cloves of garlic, diced
1 small shallot, diced
½ tsp coriander
½ tsp turmeric
½ tsp cumin
½ tsp cinnamon
¼ tsp ginger
tsp smoke paprika
½ tsp JF Spicy Salt
tsp cracked black pepper
Handful of cilantro, chopped
½ a lime, juiced

 

PROCESS

In a medium bowl, mix together the coriander, turmeric, cumin, cinnamon, ginger, and smoked paprika. Set your spice blend to the side.  In a skillet, heat the ghee. Add the diced garlic and shallots and cook on medium low stirring occasionally for 3 minutes. Add the spice mixture to the saucepan. Mix in until the spices become aromatic about 1 minute. Add the cauliflower rice to the saucepan. Turn the heat up to medium to combine and let the cauliflower cook down a bit. AddJF Spicy Salt and fresh cracked black pepper. Cook for 10 minutes, allowing the cauliflower to crisp slightly. While still in the pan, add almonds, golden raisins, chopped cilantro, and lime juice. This is great as a side dish but can become a whole meal with a fried egg on top.
