I was craving something like a roasted chicken salad for lunch today and these oyster mushrooms made for the perfect alternative. Such great flavors to pair with my JF Dairy-Free Mayo-Free Ranch - the fresh herbs here make all the difference! Serves 1.
INGREDIENTS:
3 cups romaine and frisée, chopped
¼ cup Persian cucumbers, diced
¼ cup jicama, diced
¼ cup radish, diced
¼ cup avocado, diced (optional)
2 Tbsp red onion, diced
2 Tbsp raw sunflower seeds
1 package (2 heads) oyster mushrooms, cleaned and roasted
JF Dairy-Free Mayo-Free Ranch, to taste
Oyster Mushrooms:
½ tsp fresh rosemary, chopped (sub dried rosemary)
½ tsp fresh thyme, chopped (sub dried thyme)
½ tsp onion powder
½ tsp garlic powder
¼ tsp smoked paprika
Olive oil
JF Spicy Salt, to taste
Fresh cracked black pepper, to taste
JF Dairy-Free Mayo-Free Ranch:
1 (4-5oz) container of dairy-free plain yogurt (I like Cocojune)
¼ cup almond milk (I like Three Trees)
½ tsp garlic powder
½ tsp onion powder
¼ tsp dried dill
⅛ tsp fresh cracked black pepper
¼ tsp JF Spicy Salt
1 Tbsp fresh chives, chopped
1 Tbsp fresh Italian parsley, chopped
Red chili pepper flakes
TOPPINGS:
Fresh chives, minced
Fresh Italian parsley, minced

PROCESS:
JF Dairy-Free Mayo-Free Ranch
In a medium bowl, combine the yogurt and almond milk. Mix well to reach your desired consistency. Add all of the seasonings and whisk to combine.
Oyster Mushrooms
Preheat the oven to 375°. In a small bowl combine the rosemary. thyme, onion powder, garlic powder, and smoked paprika to form your seasoning blend. Sprinkle over your oyster mushrooms, coating well.
Place them on an oiled baking sheet and lightly drizzle on additional olive oil, be sure not to oversaturate them. Season with JF Spicy Salt and black pepper; toss to coat. Roast for about 20 minutes, until browned and crisp.
Using the romaine and frisée as your base, layer in your cucumber, jicama, radish, red onion, and avocado. Top with sunflower seeds and dress in my JF Dairy-Free Mayo-Free Ranch. Arrange the roasted oyster mushrooms on top while still warm. Finish with minced chives, Italian parsley, and JF Spicy Salt.
