INGREDIENTS:
1 orange, trimmed to just the rinds2 cups water
1 cup sugar (sub coconut sugar)
1/2 tsp vanilla
1 cup granulated sugar (sub coconut sugar)
1 cup bittersweet chocolate chips (I like Hu)
PROCESS:
Cut the ends off of the oranges and then cut them in quarters. Cut out the fruit of the orange so you are left with just the rind. Cut the rind into skinny strips and try to keep them even. Place the slivers of orange rinds in a pot with water just covering the rinds and bring to a boil. Let boil for about 3 to 5 minutes then drain the water using a colander. Repeat this step one time. This will greatly reduce the bitterness of the rinds.In the same pot, add the water, sugar, and vanilla extract with the orange rinds. Bring this to a boil then reduce the heat to a simmer and let simmer for 30 minutes. Turn this heat off and drain the rinds onto a wire baking sheet with parchment paper underneath. Let them cool overnight. Once cooled roll them in granulated sugar. Melt bittersweet chocolate chips and dip either half the rind sliver or the whole rind sliver in the melted chocolate. Enjoy these on top of my JF Simple 7 Ingredient Cheesecake or enjoy on their own.
