I’ve had a difficult time finding the exact flavors I want in a sweet snack, so I’ve created my own clean version of a granola bar. It’s totally delicious and can be customized to your liking!
INGREDIENTS:
½ cup pumpkin seeds
½ cup raw sunflower seeds
½ cup sliced almonds
½ cup unsweetened shredded coconut
3 dates (I like Rancho Meladuco)
2 Tbsp hemp hearts
3 Tbsp maple syrup
½ tsp cinnamon
JF spicy salt
2 Tbsp psyllium husk
Chocolate chips (I like Hu Kitchen)
PROCESS:
Preheat the oven to 350°. In a large bowl combine the pumpkin seeds, sunflower seeds, sliced almonds, shredded coconut, dates, hemp hearts, maple syrup, cinnamon, and JF spicy salt. In a small bowl add warm water to the psyllium husk to form a loose paste, and add it to the other ingredients until well combined. Mix in chocolate chips. Press the mixture evenly into a lined baking sheet and bake for 30-40 minutes, until golden brown.
Trim the edges for a clean cut and slice into 2.5x1in. bars. Let cool, top with extra JF spicy salt, and enjoy!
