Delicious alternative to a grain salad! Pair with a nice piece of fish or enjoy entirely on its on. This one is totally intuitive - so add as much of or as little of anything you choose. Serves 1.
INGREDIENTS:
Vegan goat cheese (I like Yvonne’s)
Red onion, chopped
Radish, chopped
Celery, chopped
Frescatrano olives, chopped
Kalamata olives, chopped
Artichoke hearts, chopped
Roasted red peppers, chopped
JF Simple Mustard Vinaigrette, to taste
JF Spicy Salt, to taste
Roasted Cauliflower:
1 head of cauliflower, sliced
Olive oil (I like Fancy Peasant)
JF Universal Salt
PROCESS:
Roasted Cauliflower
Toss your sliced cauliflower in olive oil and season with JF Universal Salt; line flat side down on a prepared baking sheet. Roast until slightly charred and crisp on the edges. Cool, then roughly chop.
Crunchy Briney Salad
In a large bowl begin to build your salad. Toss together the vegan goat cheese, red onion, radish, celery, frescatrano olives, kalamata olives, artichoke hearts, and roasted red peppers. Dress in my JF Simple Mustard Vinaigrette and season with JF Spicy Salt. Enjoy!
