INGREDIENTS:
Simple Roasted Potatoes:
1 bag of purple, red, and new potatoes, quartered
1 Tbsp rosemary
1 shallot, minced
¼ cup olive oil
Fresh cracked black pepper, to taste
JF Spicy Salt, to taste
Niçoise Salad:
1 cup red oak lettuce, chopped
1 cup green oak lettuce, chopped
½ can of tuna, drained and flaked
¼ cup red onion, thinly sliced
¼ cup green beans, blanched
¼ cup briny olives
¼ cup JF Simple Roasted Potatoes
¼ cup cucumbers, chopped
¼ cup tomatoes, chopped
½ shallot, chopped
1 jammy egg
JF Simple Mustard Vinaigrette, to taste
JF Spicy Salt, to taste
Fresh cracked black pepper, to taste
PROCESS:
Simple Roasted PotatoesPreheat the oven to 400º. In a large bowl, combine the quartered potatoes with the rosemary, shallot, JF Spicy Salt, and fresh cracked black pepper. Pour the olive oil the potatoes. Mix well until everything is combined. Pour these onto a parchment lined baking sheet and convection roast for 30 minutes.
Niçoise Salad
In a large salad bowl, place the chopped green and red oak lettuce. Add the canned tuna, red onion, blanched green beans, briny olives, JF Simple Roasted Potatoes, cucumbers, tomatoes, shallot, and soft-boiled egg. Season with JF Spicy Salt and fresh cracked black pepper. Dress the salad with JF Simple Mustard Vinaigrette.
