NOT YOUR GARBAGE GROCERY STORE PASTA SALAD

I was in the mood for an old school, grocery store pasta salad, so I decided to make a healthy version. This tastes just like the version from my childhood, but with no guilt. Serves 2.

INGREDIENTS:

Roasted Artichoke Hearts:
1 cup canned artichoke hearts, drained
JF Spicy Salt, to taste
JF Simple Mustard Vinaigrette
 
Pasta Salad:
1 package grain-free pasta, cooked according to the box (I like Jovial Cassava Orzo)
¼-½ cup black olives, sliced
¼ cup roasted red peppers, finely diced
1 cup hearts of palm, diced into 1/4" pieces
¼-½ cup red onion, finely diced
½ cup fresh Italian parsley, chopped
JF Simple Mustard Vinaigrette
JF Spicy Salt, to taste
Fresh cracked black pepper, to taste

PROCESS:

Roasted Artichoke Hearts
Preheat the oven to 350°. On a parchment lined baking sheet, place the artichoke hearts. Season with JF Spicy Salt and a drizzle of my JF Simple Mustard Vinaigrette.. Roast for about 15-20 minutes.
 
Pasta Salad
Once the pasta is cooked, drizzle over my JF Simple Mustard Vinaigrette while it's still warm. This will help the pasta absorb the flavor. Make sure every component is chopped into bite size pieces; add to the pasta. Dress in my JF Simple Mustard Vinaigrette.. Season with JF Spicy Salt and fresh cracked black pepper to taste.
