One of my favorite salads in downtown NYC is the Vegetarian Niçoise from Odeon, so I’ve recreated it from home tonight. It’s a veggie-based Niçoise with a piece of seared salmon on top - so good. Serves 1.
INGREDIENTS:
Romaine, chopped
Red potatoes, chopped and boiled
Avocado, chopped
Red onion, chopped
Roasted red pepper, chopped
Green beans, halved
JF Jammy Egg, halved
Kalamata olives
JF Seared Salmon
A dollop of grainy dijon mustard
JF Simple Mustard Vinaigrette, to taste
JF Spicy Salt, to taste
Seared Salmon:
Olive oil
1 fillet wild-caught salon
JF Spicy Salt
PROCESS:
Seared Salmon
In a large pan, over a high heat, begin to warm the olive oil. As that shimmers, lay your fish in skin-side down. Season with JF Spicy Salt. Flip for an even cook.
At Home Salmon Niçoise
In a large bowl, using the chopped romaine as a base, begin to build your salad. Layer in the boiled red potatoes, avocado, red onion, roasted red pepper, green beans, olives, and a JF Jammy Egg. Top with our seared salmon and a dollop of grainy dijon. Toss in my JF Simple Mustard Vinaigrette; finish with JF Spicy Salt. Enjoy!
