My favorite sweet combo is always orange and chocolate. Given the popularity of the grain free biscotti, I wanted to try my favorite flavor profile as a new version.
INGREDIENTS:
Orange Biscotti:
3½ cups blanched almond flour
1 tsp baking soda
2 eggs
½ cup vegan butter, melted
¾ cup coconut sugar
1½ tsp vanilla extract
2 Tbsp orange juice, fresh squeezed
Chocolate Dip:
1 cup chocolate chips, melted (I like Evolved)
JF Spicy Salt
Zest of one orange
PROCESS:
Orange Biscotti
Preheat the oven to 325º. Combine your dry and wet ingredients in a large bowl. Place a tiny bit of almond flour on your countertop and begin to form your dough into two, even loaves.
Bake for 20 minutes on a parchment-lined cookie tray, then remove to cool for 15 minutes. Once slightly cool, use a serrated knife to slice your biscotti. Be gentle, they’re delicate. Flip the trays and place back into the oven at 250º to dry out. Remove when you've reached your desired crunch.
Chocolate Dip
Melt your chocolate chips. Tip one flat side or one tip of biscotti into the melted chocolate. Immediately sprinkle with the dried orange zest and a pinch of JF Spicy Salt. Place on wire rack to cool. Enjoy!
