PALEO CHOCOLATE CHIP COOKIES

PALEO CHOCOLATE CHIP COOKIES

These taste like a coconut macaroon and a chocolate chip cookie had a baby – and they are totally clean. Serves 12.

INGREDIENTS:

1 cup almond flour
¼ cup coconut flour
1 tsp baking soda
1 tsp salt
6 Tbsp almond butter
¾ cup coconut sugar
6 Tbsp coconut oil
1½ tsp vanilla extract
1 egg
1 cup chocolate chips (I like Evolved)

PROCESS:

Preheat your oven to 350º. In a large bowl, combine the almond flour, coconut flour, salt and baking soda. In a separate large bowl, combine the almond butter, coconut sugar, coconut oil and vanilla extract. Using a hand mixer, mix the wet ingredients together. Once combined, add one egg and beat in. Slowly mix in the dry ingredients using the hand mixer. Add the chocolate chips and roughly mix in. Refrigerate for at least an hour, but longer if you can. Bake for 7-8 minutes.
