I’m trying to up my protein a bit and was oddly in the mood for chicken (I’m not a chicken girl), I opt for most meat (with the exception of steak) ground, because it’s easier to “Disguise.” So tonight I spiced up some ground chicken breast to create my NEW “Disguised Chicken.” It was actually delish and will now be in rotation for the kids too. Serves 2.
INGREDIENTS:
1 Tbsp olive oil (I like Kyoord)
1 garlic clove, diced
½ small white onion, diced
1lb ground chicken breast (I like Springer Farms)
1 tsp JF Spicy Salt
1 tsp onion powder
1 tsp garlic powder
1 tsp oregano
¼ tsp fresh cracked black pepper
PROCESS:
In a large pan, warm the olive oil and begin to sauté the diced garlic and white onion. Add your ground chicken, breaking it down as it cooks. Season with JF Spicy Salt, fresh black pepper, onion powder, garlic powder, and oregano; adjust to taste. Drain the fat as needed. You don’t want to rush the cooking process here - allow this to brown and slightly crisp over the heat.
Enjoy warm over grain-free pasta.
