The first time I made these, it was a game changer for Taco Night. This is an easy, fast condiment for eggs or Mexican food.
You can make these an hour ahead but are best left overnight in the fridge in an airtight container. Adjust the salt level each batch to suit your taste. Red meat can handle more salt and lime.
INGREDIENTS:½ red onion, sliced into thin rings, then halved
1 tsp JF Universal Salt or JF Spicy Salt
Place the onions in a shallow airtight container. Juice the entire lime over the onions. Add JF Universal Salt or JF Spicy Salt. Close container and shake well. Refrigerate at least 1 hour or overnight.
That's it!! And trust me it brings an amazing level of flavor to any Mexican salad, tacos, burritos, huevos rancheros, egg scramble, or quiche.
