I wanted to make a cauliflower nugget, but most recipes call for vegan mayo which I absolutely despise. I decided to try my own recipe and they came out great. Serves 6.
INGREDIENTS:
1 egg
½ cup avocado oil
1 tsp dijon mustard
1
½ tsp
JF Spicy Salt1 head of cauliflower, chopped into florets
½ tsp onion powder
½ tsp garlic powder
½ tsp paprika
⅛ tsp turmeric
1 tsp thyme
1 Tbsp nutritional yeast
3 Tbsp cassava flour
PROCESS:
Preheat your oven to 400º convection roast. In a bowl, combine the egg, avocado oil, dijon, and
½ tsp
JF Spicy Salt. Mix really well and pour over the cauliflower florets. Set to the side. In small bowl, combine the onion powder, garlic powder, paprika, turmeric
, thyme, nutritional yeast, cassava flour, and the
remaining JF Spicy Salt. Stir to combine. Pour this mixture over the cauliflower florets and mix really well so the florets are evenly seasoned. Pour the cauliflower onto a parchment lined baking sheet and bake for 30 minutes. Serve these with BBQ sauce and mustard for dipping.
