I was in the mood for a crunchy salad tonight so decided to do something a bit different - we’re calling this the Hodgepodge Salad. This is a totally intuitive recipe, meaning no measurements, add as much of, or as little of anything as you like.
INGREDIENTS:
Romaine
Pea shoots
Iceberg
Alfalfa sprouts
Plant-based smoked gouda, chopped fine (I like 365)
Persian cucumbers, chopped fine
Frescatrano olives, chopped fine (I like Divina)
Red onion, chopped fine
Watermelon radish, chopped fine
Pepperoncinis, chopped fine
Chives, chopped fine
Sunflower seeds
JF Spicy Salt
JF Simple Mustard Vinaigrette
PROCESS:
In a large bowl layer in the romaine, pea shoots, iceberg, and alfalfa sprouts to create your base. Add the plant-based gouda, Persian cucumbers, olives, red onion, radish, pepperoncinis, chives, and sunflower seeds. Season with JF Spicy Salt and dress in my JF Simple Mustard Vinaigrette. Enjoy!
