This is my riff on a classic broccoli salad. So good with my JF Shiitake Bacon, it's the perfect tender-crunchy balance, and gives you a yummy, savory bite. Serves 1.
INGREDIENTS:
3 cups broccoli, chopped fine
Micro arugula, to taste
¼ cup red onion, diced fine
2 slices vegan cheddar, chopped fine
4 dried apricots, chopped
Fresno pepper, chopped fine, to taste
2 Tbsp raw sunflower seeds
1 serving JF Shiitake Bacon
JF Simple Mustard Vinaigrette, to taste
JF Spicy Salt, to taste
JF Shiitake Bacon:
½ tsp of olive oil
2 cups shiitake mushrooms, sliced
2-3 tsp coconut aminos or tamari
1½ tsp maple syrup
1 tsp liquid smoke
1 tsp smoked paprika
JF Spicy Salt, to taste
Fresh cracked black pepper, to taste
PROCESS:
JF Shiitake Bacon
Preheat the oven to 400º. Warm the olive oil in a cast iron pan over medium high heat. Add the mushrooms, coconut aminos, maple syrup, liquid smoke, and paprika. Stir constantly to combine, coating the mushrooms well. Season with JF Spicy Salt and fresh cracked black pepper to taste. Sauté for 3-5 minutes until they turn slightly crisp. Finish in the oven for 10-12 minutes.
Savory and Smokey Raw Broccoli Salad
In a large bowl, using the chopped broccoli as your base, begin to build your salad. Layer in the micro arugula, chopped red onion, vegan cheddar, sunflower seeds, dried apricots, and the shiitake bacon. Dress in my JF Simple Mustard Vinaigrette and season with JF Spicy Salt. Pair with your choice of protein, toss, and enjoy!
