ROASTED DELICATA SQUASH

This is the perfect dish to make in the fall. Top this with your favorite garnishes to make it your own. Serves 4.

INGREDIENTS:

2 delicata squash, cut into ½in. thick circle slices with the seeds spooned out
Olive oil
JF Curry Salt
Onion Powder
Cobanero chili pepper
Goat cheese (sub plant-based cheese)
Calabrian chili peppers
Cilantro, roughly chopped
JF Simple Mustard Vinaigrette
JF Spicy Salt

PROCESS:

Preheat your oven to 400°. On a parchment paper lined baking sheet, lay out the ½ inch thick slices of delicata squash. Drizzle with olive oil generously. Season with JF Curry Salt, onion powder, and cobanero chili. Roast for 15-20 minutes. Try this with goat cheese, Calabrian chili peppers, cilantro, a drizzle of my JF simple mustard vinaigrette, and a sprinkle of JF Spicy Salt.
