Roasted Sweet Potato “Blinis”

My newest clean vehicle so I can shove more caviar in my face. Roasted Sweet Potato “Blinis” this time brunch style with green onion soft scrambled eggs. Serves 1 as a main. 

INGREDIENTS:

Roasted Sweet Potato “Blinis:”
1 Sweet potato, peeled and sliced into rounds on the mandoline (#3)
Olive oil (I like Fancy Peasant)
JF Spicy Salt, to taste

TOPPINGS:

Russian Ossetra Caviar (I like Black Diamond)
JF Green Onion Soft Scramble 
A touch of JF Spicy Salt


Green Onion Soft Scrambled Eggs:
3 eggs, beaten 
Green onion, sliced thin on the diagonal
A touch of fresh cracked black pepper 

PROCESS:

Roasted Sweet Potato “Blinis”
Preheat your oven to 400º. Line your sweet potato rounds on a baking sheet. Lightly drizzle in olive oil and season with my JF Spicy Salt. Convection roast for about 10 minutes. If they’re still soft to the touch, flip and roast until slightly crisp. Cool on a wire rack. 


Green Onion Soft Scrambled Eggs
In a prepared pan, begin to warm your sliced green onion. As they become fragrant, pour in your eggs. I find these best when undercooked; turn off the heat as soon as they start to come together. Season with a touch of black pepper. 


Begin to assemble your Roasted Sweet Potato “Blinis.” Top with the green onion soft scramble and caviar. Finish with a touch of JF Spicy Salt. Enjoy!
