ROASTED SWEET POTATO ‘TACOS’

Try this sweet potato as your taco ‘meat’ to enjoy a meat free Mexican night. Serves 1.

INGREDIENTS:

1 sweet potato, cubed
2 Tbsp olive oil
½ tsp smoked paprika
JF Spicy Salt, to taste
Fresh cracked black pepper, to taste
Grain-free tortilla

TOPPINGS:

Purple cabbage, sliced thin on the mandolin
Jalapeño, deseeded and sliced thin on the mandolin 
Mango, cut into chunks
Dairy-free cheese
Hot sauce

PROCESS: 

Preheat the oven to 375°. Place the cubed sweet potato in a small bowl and drizzle with olive oil until lightly coated. Mix in the smoked paprika, JF Spicy Salt, and fresh cracked black pepper until the sweet potato is all seasoned. Pour the potato onto a baking sheet and bake for minutes. Assemble your taco with desired toppings and enjoy!
