Salad Nachos

I was craving nachos but wanted to make a cleaner version with my signature lime cilantro vinaigrette.

INGREDIENTS:

2 cups grain-free tortilla chips (I like Siete dip chips)
½ cup JF Healthy, Fast-Food Ground Beef
½ cup plant-based cheese, shredded (I like Violife)
1 radish, thinly sliced and cut into matchsticks
2 Tbsp organic, pickled jalapeño, chopped
½ avocado, sliced
2 Tbsp cilantro, chopped
Handful of cabbage, shredded
Hot sauce, to taste
JF Spicy Salt, to taste

 

JF Healthy, Fast-Food Ground Beef:
½
 white onion, chopped
1lb organic grass-fed ground beef
½ tsp cumin
½ tsp chili powder
½ tsp oregano
½ tsp onion powder
½ tsp garlic powder
½ tsp dried cilantro
1 tsp JF Spicy Salt
1 Tbsp tomato paste

 

Lime Cilantro Vinaigrette:
½ cup olive oil
1¼ cup fresh cilantro
3 Tbsp lime juice, fresh squeezed 
1 Tbsp apple cider vinegar
½ tsp oregano
1 tsp JF Spicy Salt
1 tsp water

PROCESS:

JF Healthy, Fast-Food Ground Beef
In a large pan on medium heat, sauté the onion for about 3-5 minutes. Add in the ground beef. Season with cumin, chili powder, oregano, onion powder, garlic powder, dried cilantro, and JF Spicy Salt. Using the flat edge of a spatula, mix the seasoning into the meat and crumble it into small pieces. Add in the tomato paste and mix well. Adjust seasoning to taste. Cook on medium heat until the beef is cooked through.

 

Lime Cilantro Vinaigrette
Whisk together all ingredients until well combined. 

 

Salad Nachos
Put the plant-based cheese and JF Healthy, Fast-Food Ground Beef on top of the nachos and heat up until the cheese melts. Add the cabbage, radish, jalapeño, avocado, hot sauce, and Lime Cilantro Vinaigrette on top. Sprinkle JF Spicy Salt and cilantro for taste and enjoy!
