Chip Scoop Salad

Super clean, easy, and delish salsa salad - perfect for when you want salsa, but just a bit more of it. This is the perfect appetizer or lunch, pair with a squeeze of lemon, lime, fresh dill, or cilantro. Make it your own and enjoy with your choice of grain-free chips. Serves 2.

INGREDIENTS:

Yellow pepper, diced fine
Red onion, diced fine
Persian cucumber, diced fine
Tomatoes, diced fine
Avocado, diced fine
Vegan feta, crumbled (I like Trader Joe’s)
Fresh cilantro, coarsely chopped
JF Simple Mustard Vinaigrette, to taste
JF Spicy Salt, to taste
Grain-free tortilla chips

PROCESS:

Add the finely diced pepper, red onion, cucumber, tomato, avocado, vegan feta, and cilantro to a large bowl. Toss to combine. Dress in my JF Simple Mustard Vinaigrette and season with a generous amount of JF Spicy Salt. Enjoy scooped onto grain-free tortilla chips.
