Threw this slaw together with whatever I had in the fridge. Pairs perfectly with my JF Cilantro Lime Vinaigrette, but if you’re pressed for time like myself, dress in my JF Simple Mustard Vinaigrette - just as good. Serves 4.
INGREDIENTS:
4 cups purple cabbage, sliced thin on the mandolin (sub any color cabbage)
½ cup red onion, sliced thin on the mandolin
½ cup organic Persian cucumber, sliced thin on the mandolin
½ a large orange carrot, sliced thin on the mandolin (sub 5 baby carrots)
½ jalapeño, deseeded and sliced thin on the mandolin
1 avocado, diced
Vegan cheese or queso fresco (optional)
A handful of cilantro, coarsely chopped
A squeeze of ½ a fresh lime
JF Simple Mustard Vinaigrette, to taste
JF Spicy Salt, to taste
