Since you guys are loving my Tastes Like Grain Salad, I decided to make a spicy caesar version. Prep is key here - soaking the cashews, chopping the veg, and making the grain ahead will totally simplify the process for busier days. Serves 1.
INGREDIENTS:
4 cups romaine, chopped
4 cups cauliflower rice, cooked and cooled
1 cup purple or green cabbage, chopped
½-1 avocado, chopped
½ cup red onion, chopped
½ cup radish, chopped
¼ cup jicama, chopped
¼ raw pumpkin seeds
½ cup jalapeño, deseeded and chopped (optional)
¼ cup cilantro, roughly chopped (optional)
¾ cup grain-free chips, crushed (I like Siete Taco Shells)
Cauliflower Rice:
1 (24oz) bag frozen cauliflower rice
2 Tbsp olive oil
JF Spicy Salt
Dressing:
½ cup raw cashews, soaked
½ cup water
1 tsp capers with brine
1½ tsp Dijon mustard
6 Tbsp lime juice
1 Tbsp red wine vinegar
3 Tbsp olive oil (I like Fancy Peasant)
Hot sauce, to taste (I like Tia Lupita)
¼ tsp cumin
JF Spicy Salt, to taste
PROCESS:
Cauliflower Rice
In a large pan, warm the olive oil over medium-high until it begins to shimmer. Add your cauliflower rice and season with JF Spicy Salt. Don’t rush the cooking process, allow it to become slightly crisp over the heat. Cool completely before assembling.
Dressing
In a small pan over medium heat, bring the cashews to a boil. Reduce to low heat for about 10-15 minutes, until rehydrated and tender. Drain and add them to your blender. Blend all of the ingredients together, adjusting to reach your desired consistency.
