INGREDIENTS:
- 1 cup plain coconut yogurt (I like Culina)
- Pineapple, diced
- Avocado, diced
- Red onion, diced fine
- Red pepper, diced fine
- Cilantro, chiffonade
- Jalapeño, deseeded and sliced thin on the mandoline
- A drizzle of olive oil
- JF Spicy Salt, to taste
PROCESS:
1. Spoon your yogurt into a large bowl. Top with the chopped pineapple, avocado, red onion, red pepper, and jalapeño,2. Finish with a drizzle of olive oil and my JF Spicy Salt. Enjoy!
