Tonight's dinner was so easy it was insane. The key here is the chopped dates, toasted pepitas, and fresh jalapeño - so good! Serves 2.
INGREDIENTS:
JF Dijon Hemp-Crusted Salmon, flaked
Cauliflower Rice
Arugula
Pepitas, toasted
Dates, pitted and chopped
Avocado, chopped
Jalapeño, deseeded and diced
Cilantro, chiffonade
JF Simple Mustard Vinaigrette, to taste
JF Spicy Salt, to taste
Dijon Hemp-Crusted Salmon:
2 wild caught salmon fillets,
1 Tbsp dijon mustard
2 Tbsp hemp hearts
JF Spicy Salt
Fresh cracked black pepper
Onion powder
Garlic powder
Olive oil
Cauliflower Rice:
Olive oil
Garlic, chopped
Onion, chopped
JF Spicy Salt
1 (24oz) bag cauliflower rice
PROCESS:
Dijon Hemp-Crusted Salmon
Preheat the oven to 350º and line a sheet tray with foil. Coat each piece of salmon with dijon mustard; layer on your hemp hearts and spices. Drizzle over the olive oil and conversion roast for 15 minutes. Remove from the oven and flake each fillet before assembling in your bowl.
Cauliflower Rice
In a large sauté pan, warm the olive oil over medium/medium-high heat; add your chopped onion and garlic. Season with JF Spicy Salt, allowing them to soften and slightly brown. Once fragrant, add your cauliflower rice. Don’t rush the cooking process here, allow this to charr slightly as it cooks. Set aside.
Sweet and Savory Wild Salmon Bowl
Toss the arugula in my JF Simple Mustard Vinaigrette and use it as the base for your bowl. Top with our flaked salmon, cauliflower rice, chopped dates, avocado, and toasted pepitas. Finish with our jalapeño, cilantro, additional JF Spicy Salt, and a touch more JF Simple Mustard Vinaigrette. Enjoy!
