Greek Tacos are SO good, and now definitely a “thing” in our house after tonight. Super easy and fun to build your own so it’s perfect for kids and families. Serves 4, 2 tacos each.
INGREDIENTS:
Grain-free, hard taco shell (I like Siete)
Greek Ground Beef:
2 Tbsp olive oil
1 small white onion, diced
2 garlic cloves, diced
2lbs grassfed beef
1 Tbsp dried oregano
1 tsp cumin
1 tsp smoked paprika
1 tsp dill
10 turns fresh cracked black pepper
1 tsp JF Spicy Salt, more to taste
Cucumber Tomato Salad:
2 persian cucumbers, diced fine
1 container red and yellow cherry tomatoes, diced fine
3 large slices of red onion, diced fine
Olive oil (I like Facy Peasant)
JF Universal Salt, to taste
Greek Crema:
1 container plain coconut yogurt (I like Culina)
1 garlic clove, minced
A of handful fresh dill
JF Spicy Salt, to taste
A drizzle of olive oil (I like Facy Peasant)
TOPPINGS:
Vegan feta cheese, crumbled (I like Trader Joe’s)
Pepperoncinis, chopped
Kalamata olives, chopped
Fresh mint, chopped
A squeeze of fresh lemon
PROCESS:
Greek Ground Beef
In a large pan warm your olive oil. When it begins to shimmer add the diced white onion and garlic; allow this to soften slightly for about a minute. Add the grassfed beef, breaking it apart as it cooks down. Season with your oregano, cumin, smoked paprika, dill, fresh cracked black pepper, and JF Spicy Salt. Don’t rush the cooking process here, allow this to slightly brown and crisp over the heat, then drain the fat.
Cucumber Tomato Salad
In a large bowl add the chopped persian cucumbers, red and yellow cherry tomatoes, and red onion. Combine well. Dress in olive oil and season with JF Universal Salt to taste.
Greek Crema
In a small bowl, add the plain coconut yogurt, minced garlic, fresh dill, and JF Spicy Salt. Combine well and finish with a drizzle of olive oil.
Greek Tacos
Wedge your grain-free taco shell between two lemon quarters and begin to assemble. Using your Greek Gorund Beef as the base, build upwards with our Cucumber Tomato Salad and Greek Crema. Top with crumbled vegan feta, chopped pepperoncinis, kalamata olives, fresh mint, and a squeeze of fresh lemon juice. Enjoy!
