I’ve sort of been off the “meat train” for most of this quarantine and wanted something satisfying and meat free, so here it is.
INGREDIENTS
1 head cauliflower
2 Tbsp ghee oil
1 Tbsp chili powder
1 tsp garlic powder
1 tsp onion powder
½ tsp cumin
½ tsp paprika
½ tsp dried cilantro
½ tsp JF Universal or Spicy Salt
Grain-free tortilla
TOPPINGS
JF Guacamole
Queso fresco, crumbled (sub plant-based cheese)
Salsa
Hot sauce
Sour cream (sub plain coconut sugar)
Cilantro, coarsely chopped
PROCESS
Preheat oven to 375° on convention roast. If you do not have convection roast on your oven heat to 400°.
Rinse and dry your cauliflower. Cut into small florets. Add to a large mixing bowl and pour ½ of the oil over the cauliflower and mix well. In a small bowl combine all spices and mix well. Add ½ the spice mix into cauliflower and mix very well. Add other ½ of oil and mix well then add remaining spice mix and mix well.
Spread evenly on a parchment lined baking sheet and roast until dark brown and crispy. Remove from oven and serve on warm tortillas with my JF Guacamole and crumbled plant-based queso fresco, salsa or hot sauce and sour cream. So freaking good!
