Homemade “working lunch” should never feel like “work.” Today’s “Tastes Like Summer” Salad is a new favorite! The slight sweetness from the pomegranate seeds and dried jackfruit combined with the savory vibe of my JF Universal Salt, the vegan feta, and hazelnuts creates a perfect bite. Serves 1.
INGREDIENTS:
Red leaf lettuce, washed and torn
Gotham Greens Brooklyn Crunch, washed and torn
Dried jackfruit, chopped
English cucumber, chopped
Avocado, chopped
Vegan feta cheese, crumbled (I like Trader Joe’s)
Red onion, chopped
Pomegranate seeds
Raw hazelnuts, roughly chopped
Mint, torn
Dill, torn
JF Universal Salt, to taste
JF Simple Mustard Vinaigrette, to taste
PROCESS:
In a large bowl, using the torn red leaf and Brooklyn Crunch as your base, begin to build your salad. Layer in the dried jackfruit, cucumber, avocado, crumbled vegan feta, red onion, pomegranate seeds, hazelnuts, fresh mint, and dill. Season with my JF Universal Salt and dress in my JF Simple Mustard Vinaigrette.
