When our BF flies in late for a sleepover before our early flight… you make her dinner. A fast sautéed shrimp over chopped romaine, mango, and crunchy veg - super easy and so delicious. Serves 1.
INGREDIENTS:
Romain, chopped
Mango, chopped
Avocado, chopped
Radish, chopped
Red onion, chopped
Cilantro, coarsely chopped
Raw sunflower seeds
Shrimp, sautéed then chopped
JF Simple Mustard Vinaigrette, to taste
Sautéed Shrimp:
Olive oil
Shrimp
JF Spicy Salt
PROCESS:
Sautéed Shrimp
In a large sauté pan warm your olive oil. When that begins to shimmer add in your shrimp. Season with JF Spicy Salt and flip for an even cook. Once they curl and are just pink, remove them from heat. Set aside to cool completely, then chop.
Tata’s Shrimp Salad
In a large bowl, using the chopped romaine as a base, begin to build your salad. Layer in the mango, avocado, radish, red onion, cilantro, and raw sunflower seeds. Top with our sautéed shrimp, toss in my JF Simple Mustard Vinaigrette, and enjoy!
