The most simple, delicious salad made with ingredients directly from my dad’s garden! The shrimp here are so versatile - also great over pasta, in a wrap, or completely on their own. Serves 2; halve the number of shrimp for one serving.
INGREDIENTS:
Shrimp:
1 Tbsp olive oil
1 garlic clove, minced fine
20 medium/large Shrimp
2 Tbsp unsalted vegan butter
JF Spicy Salt, to taste
The Easiest Tropical Shrimp Salad:
Romaine & red leaf mix
½ avocado, sliced
½ mango, diced
2 Tbsp radish, slivered
1 Tbsp cilantro, chopped
JF Curry Salt
JF Simple Mustard Vinaigrette
PROCESS:
Shrimp
In a large sauté pan warm the olive oil and garlic. Add your shrimp, allowing them to curl over the heat. Season generously with JF Spicy Salt and finish with the vegan butter, melting down and incorporating well.
The Easiest Tropical Shrimp Salad
Begin to build your salad using the romaine and red leaf as your base. Layer in the avocado, mango, radish, and cilantro. Add the shrimp, ladling over some of the residual butter sauce for greater flavor. Season with JF Curry Salt, dress in my JF Simple Mustard Vinaigrette, and enjoy!
