I like to make this for myself on taco nights when I am not in the mood to eat meat, but still want the flavor of taco meat. Serves 2.
INGREDIENTS:
1 package organic firm tofu, pressed well and diced small
1 Tbsp olive oil
1
½ Tbsp chili powder
1 tsp cumin
1 tsp garlic powder
1 tsp onion powder
½ tsp paprika
1 tsp
JF Spicy Salt or JF Universal Salt½ tsp fresh cracked black pepper
2 Tbsp corn starch (sub arrowroot starch)
PROCESS:
Combine all ingredients except the tofu and oil in a large mixing bowl. Stir to combine well. Add the tofu and toss to coat. Using a large non-stick frying pan, heat the olive oil on medium high heat. Add tofu and sauté stirring often but allowing it to crisp. Sauté until crispy so that the texture almost emulates crumbled meat. Serve immediately with hot tortillas and your favorite toppings as tacos or over greens as a taco salad.
