Universal Meatballs

This is a great go-to when you're looking to up protein. The meatballs are super versatile - add any of your favorite seasonings, and enjoy over grains, greens, or completely on their own. Yields approx. 30 meatballs. 

INGREDIENTS:

  • Avocado oil
  • ½ white onion, chopped
  • 1 garlic clove, chopped
  • JF Spicy Salt, to taste
  • 2lb ground chicken (1lb dark meat + 1lb white meat)
  • 2 eggs, whisked
  • Olive oil (I like Kyoord)
  • Onion powder, to taste
  • Garlic powder, to taste
  • JF Spicy Salt, to taste
  • 10-12 grinds cracked black pepper

PROCESS:

1. Preheat your oven to 350º. In a large sauté pan over medium heat, begin to warm you avocado oil.


2. Add in the onion and garlic, allowing both to sweat down and soften. Season with my JF Spicy Salt.


3. Once tender, remove from the heat and set aside to cool slightly. 


4. In a large bowl add the ground chicken, eggs, olive oil, sautéed onion and garlic (with any residual avocado oil included), JF Spicy Salt, cracked black pepper, onion powder and garlic powder; mix with your hands to combine. 


5. Form 1½” meatballs and line them on a prepared baking sheet, finishing with an extra drizzle of olive oil.


6. Convection roast until they reach an internal temperature of 165º. Drain any excess liquid as needed. 


7. Once they’re cooked through, remove them from the heat and set aside to cool slightly. Enjoy warm!
